Fish Kebabs from Saffron Tree

fish kebabs

fish cubes marinated in a spiced yogurt base and pan fried/grilled to finish

Ingredients

500 gms fish cubes (monkfish, cod or haddock)
Half tsp garlic puree
Half tsp ginger puree
Quarter tsp dry red chili flakes (red chili powder will do)
Quarter tsp ground cumin
2 tbsp fresh mint, crushed
1 tbsp strained yogurt (thick yogurt would do)
A pinch of ground turmeric
Salt to taste (about quarter tsp)
2 tbsp oil
Lime wedges to squeeze over

Method

  • 1. In a little bowl, combine the oil, garlic and ginger puree, red chili flakes, ground cumin, ground turmeric, crushed mint, strained yogurt and salt
  • 2. Add the fish to the marinade and stir well to coat. Cover and set aside for 15 mins
  • 3. Pan fry on medium heat for 3-5 mins until cooked or skewer the fish and cook on a well greased hot grill for 2-3 mins on each side until light brown and cooked through
  • 4. Squeeze the juice of half a lime to finish!
