masala kaju

a spiced cashew nut stir fry


250g whole cashew nuts, soaked for 30mins. 1 tbsp. oil
Half tsp black mustard seeds
Half tsp cumin seeds
1 tbsp. dry curry leaves
Quarter tsp turmeric
Quarter tsp chili powder
Half tsp coriander powder
Half tsp salt
1 tbsp. lemon juice
1 tbsp. chopped coriander


  • 1. Heat oil in a pan.
  • 2. Add the mustard seeds, cumin seeds and dry curry leaves. Sauté for a few mins on medium heat until mustard seeds crackle.
  • 3. Drain the cashew nuts and add to the pan, along with the powdered spices and lemon. juice
  • 4. Mix well to combine. Fry for about 5 mins on low heat.
  • 5. Garnish with chopped coriander.
