Spiced Okra

okra - spiced up!

sliced okra tossed in finely chopped onions and spices


250 gms Okra
2 tbsp oil
1/2 tsp cumin seeds
1 small onion finely chopped
a pinch of turmeric
1/4 tsp chili powder
1 tbsp tomato puree
salt to taste (about 1/8th tsp)


  • 1. Wash Okra.
  • 2. Dry thoroughly on a paper towel.
  • 3. Top and tail to prepare.
  • 4. Slice into four diagonal strips - set aside.
  • 5. Heat oil in a non-stick pan.
  • 6. On low-medium heat, add cumin seeds and onions.
  • 7. Fry until onions are translucent.
  • 8. Turn down heat when completed and add powdered spices and tomato puree.
  • 9. Sauté for 2-3 mins to cook.
  • 10. Add Okra, toss well.
  • 11. Turn up the heat to medium and cook uncovered for about 10-12 mins until okra is caramelised and coated.
  • Optional: Sprinkle with a pinch of dry mango powder, a dash of lime juice or white distilled vinegar for a kick!
