Spiced Okra

vegetable pulao

basmati rice cooked with whole spices and diced vegetables

ingredients

400g basmati rice
2 cloves
2 green cardamom
2 cinnamon sticks (about 2 inches)
3 dry bay leaves
1 onion – finely chopped
1 tsp ginger-garlic paste (could do 1/2 tsp ginger paste + 1/2 tsp garlic paste) 1/2 tsp salt
50g carrots – diced (10mm)
50g green beans – diced (10mm)
50g peas (frozen will do!)
3 tbsp. oil (3 tbsp. ghee if you prefer)
1275ml water

method

  • 1. Rinse rice in cold water and soak for about 30 mins (skip if you want mushy rice!)
  • 2. Heat oil in a wide, preferably shallow casserole pan
  • 3. Add cloves, cardamom, cinnamon, bay leaves and chopped onion
  • 4. Fry for 2-3 mins until onions turn light brown
  • 5. Lower heat and add ginger-garlic paste
  • 7. Sauté well to cook (about 2-3 mins)
  • 8. Add vegetables and salt
  • 9. Sauté for about 5 mins
  • 10. Add water
  • 11. Bring to a boil
  • 12. Drain and add the rice - stir lightly
  • 13. Cook uncovered on medium-high heat until most of the water evaporates (about 90%)
  • 14. Reduce heat completely
  • 15. Cover and let it cook for 2-3 mins until done
  • 16. Turn the heat off and leave covered for at least 5 mins
