Tofu Scramble

Aromatic scrambled Tofu the Saffron Tree way


2 tbsp oil
3 red onions, finely chopped 
1 tsp ginger and garlic paste 
2 small cherry tomatoes, finely chopped
1/2 tsp ground turmeric
1 tsp red chilli powder
2 green finger chillies, chopped
2 tbsp fresh coriander, chopped
1/2 tsp salt
1 tsp lemon juice
200g tofu, crumbled


1.Heat oil in a pan

2.Add the onions, fry until light brown

3,Add the ginger and garlic paste, fry for a min to cook

4.Add the turmeric, fry for a few seconds

5.Add the chilli powder and the tomatoes, mix well. Cover and cook on low heat until the tomatoes are pulpy and the oil starts to separate 

6.Add the fresh coriander and chopped green chilli. Sauté for a min in low heat

7.Add the tofu and the lemon juice. Mix well. Continue to let it cook uncovered for 5 mins on medium heat
